Delightful vegan butter cookies that are simple, buttery, and melt-in-your-mouth delicious.

  • 1 cup vegan butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Melted chocolate (for dipping)
  • Sprinkles (for decorating)

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s nice and hot for when your cookies are ready.
  2. Cream together the vegan butter and sugar until light and fluffy.
  3. Add the vanilla extract to the creamy mixture and mix well.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture and mix until fully combined.
  6. Using a piping bag, pipe the cookie dough onto lined baking sheets.
  7. Bake for 12-15 minutes until edges are lightly golden.
  8. Let the cookies cool completely on the baking sheet.
  9. Dip the cooled cookies into melted chocolate and decorate with sprinkles.
  10. Allow the chocolate to set before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to one week. Freeze for up to three months with parchment paper in between layers.
