These delightful Vegan Coconut Macaroons are nutty, chewy, and luxurious with a drizzle of dark chocolate. A perfect treat for sharing or enjoying solo!

Ingredients

  • 2 1/2 cups shredded coconut
  • 1/2 cup almond flour
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate (for dipping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the shredded coconut, almond flour, maple syrup, vanilla extract, and salt in a bowl until well incorporated.
  3. Scoop tablespoon-sized amounts of the mixture and form them into little balls.
  4. Bake the macaroons for 15-20 minutes, or until the edges are golden brown.
  5. Cool completely on the baking sheet.
  6. Melt the dark chocolate using a microwave or a double boiler until smooth.
  7. Dip or drizzle the cooled macaroons in melted chocolate.
  8. Allow the chocolate to set before serving.

Notes

Store leftover macaroons in an airtight container at room temperature for up to a week. For longer storage, refrigerate for up to two weeks.
