A vibrant dish filled with colorful vegetables and a zesty dressing, perfect for gatherings or as a simple weeknight snack.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Combine the fresh ingredients in a large mixing bowl.
  2. Whisk the dressing in a separate small bowl.
  3. Pour the dressing over the veggie mixture and toss until well-coated.
  4. Serve immediately with crispy tortilla chips for scooping!

Notes
