A comforting Vegan Gnocchi Soup filled with gnocchi, hearty kale, and savory vegan sausage in a creamy broth.

Ingredients

  • 1 package vegan gnocchi
  • 1 cup vegan sausage, sliced
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk or other non-dairy milk
  • 1 onion, diced
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 3–4 minutes.
  2. Add vegan sausage: Toss in the sliced vegan sausage and cook until browned, adding a deep flavor to the soup.
  3. Pour in the vegetable broth and bring it to a boil.
  4. Stir in the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the surface.
  5. Stir in the chopped kale and let it cook until wilted and vibrant, about 2 minutes.
  6. Pour in the coconut milk and season with salt and pepper to taste. Stir to combine and let it heat through.
  7. Ladle the soup into bowls and serve hot.

Notes

Pairs well with crusty whole-grain bread or a light green salad. Add pine nuts or nutritional yeast for extra flavor.
