A plant-based twist on the classic green bean casserole, melding fresh green beans with creamy vegan mushroom soup and topped with crispy fried onions.

Ingredients

  • Fresh green beans
  • Cream of mushroom soup (vegan)
  • Fried onions (gluten-free if desired)
  • Salt
  • Pepper
  • Olive oil (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Trim the ends off the green beans and then blanch them in boiling water for about 5 minutes until just tender. Drain and set aside.
  3. Combine the blanched green beans with the vegan cream of mushroom soup, salt, and pepper. Mix well.
  4. Pour the green bean mixture into a baking dish, and top generously with fried onions.
  5. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and crispy.
  6. Serve hot as a side dish.

Notes

For a gluten-free version, use gluten-free fried onions. Can also be prepared ahead of time and baked before serving.
