Instructions

  1. Combine ingredients in a slow cooker: In a slow cooker, combine the black beans, corn, bell peppers, zucchini, taco seasoning, salt, and pepper.
  2. Cook on low for 4-6 hours or until the veggies are tender.
  3. Spoon filling into lettuce leaves: Once cooked, spoon the colorful filling into the lettuce leaves.
