Delicious and nutritious Vegan Oat Muffins perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup applesauce
  • 2 cups whole oats
  • 1 cup plant-based milk
  • 1/2 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup nuts or raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas until smooth and creamy.
  3. Stir in the applesauce, plant-based milk, and maple syrup.
  4. Add the whole oats, baking powder, cinnamon, and salt and mix until combined.
  5. Fold in the nuts or raisins, if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool for a few minutes before removing from the tin.

Notes

For best results, use very ripe bananas and avoid overmixing the batter.
