A delicious and satisfying breakfast sandwich made with crumbled tofu, sautéed vegetables, and savory sauce on whole grain English muffins.

Ingredients

  • 1 block Firm tofu
  • Vegan sausage or bacon
  • 1 cup Bell peppers, diced
  • 1 cup Spinach
  • 1 Onion, diced
  • 1/2 teaspoon Turmeric
  • 2 tablespoons Nutritional yeast
  • 1/4 cup Plant-based milk
  • Savory sauce (e.g. vegan mayo or hot sauce)
  • 2 Whole grain or vegan English muffins

Instructions

  1. Crumble the firm tofu into a bowl and mix in turmeric, nutritional yeast, and a splash of plant-based milk.
  2. Heat a pan over medium heat and sauté diced onion, bell peppers, and spinach until soft.
  3. Add the crumbled tofu mixture to the pan and cook until heated through and slightly golden.
  4. Cook the vegan sausage or bacon in another pan according to package instructions.
  5. Toast the English muffins until golden.
  6. Spread the savory sauce on the muffin halves and layer the tofu scramble with the cooked vegan sausage or bacon in between.
  7. Plate your breakfast sandwiches and serve warm.

Notes

For best results, ensure tofu is well-pressed. Customize veggies and spices per your taste.
