A delicious Vegan Tomato Tart featuring flaky puff pastry, herbed vegan ricotta, and ripe tomatoes—perfect for any gathering or a delightful evening at home.

  • 1 sheet puff pastry
  • 1 cup herbed vegan ricotta
  • 23 ripe tomatoes, sliced
  • Fresh basil leaves
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a tart pan.
  3. Spread the herbed vegan ricotta evenly over the pastry crust.
  4. Arrange the sliced tomatoes on top of the ricotta.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the preheated oven for about 25-30 minutes or until the crust is golden brown.
  7. Garnish with fresh basil leaves and serve warm or at room temperature.
