Delicious and cheesy White Chicken Enchiladas that are perfect for a cozy night at home.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup green enchilada sauce
  • 8 small flour tortillas
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, and half of the cheddar cheese. Season with salt and pepper, and mix until creamy.
  3. Gently warm the tortillas in a dry skillet or microwave.
  4. Spoon a generous amount of the chicken mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour the green enchilada sauce evenly over the rolled enchiladas.
  6. Top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  8. Sprinkle with freshly chopped cilantro before serving.

Notes

Make ahead of time and refrigerate, just cover tightly. You can customize the filling by adding black beans or corn.
