A delightful marriage of perfectly grilled shrimp, fresh veggies, and tangy feta, all brought together with a zesty lemon drizzle.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill the shrimp for about 2-3 minutes per side until pink and opaque.
  4. Combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl.
  5. Add the grilled shrimp on top of the salad mixture.
  6. Drizzle with lemon juice and sprinkle with chopped parsley.
  7. Gently toss everything together and serve immediately.

Notes

Serve with warm pita bread or a side of hummus for a complete meal. Store leftovers in an airtight container for up to 2 days.
