Delightful zucchini boats filled with seasoned meat, colorful veggies, and melted cheese, perfect for a light and flavorful meal.

Ingredients

  • 2 medium zucchini
  • 1 cup cooked ground beef or turkey
  • 1 cup diced tomatoes
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1 teaspoon taco seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the center to create boats.
  3. In a bowl, combine the cooked ground meat, diced tomatoes, black beans, corn, taco seasoning, salt, and pepper.
  4. Carefully fill each zucchini boat with the meat mixture.
  5. Sprinkle a generous amount of shredded cheese over the stuffed zucchini boats.
  6. Place the filled zucchini boats on a baking sheet and bake for 20-25 minutes.
  7. Garnish your tasty boats with fresh cilantro before serving.

Notes

Best served with a side of Mexican rice or avocado salad. Leftovers can be stored in an airtight container for up to 3 days.
