Delicious zucchini boats filled with ground meat, marinara sauce, and topped with gooey cheese—perfect for a healthy meal.

Ingredients

  • 2 medium zucchini
  • 1 cup cooked ground beef or turkey
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the insides to create a boat shape.
  3. Heat a drizzle of olive oil in a skillet over medium heat and add the cooked meat.
  4. Stir in the marinara sauce, Italian seasoning, salt, and pepper and let simmer for a couple of minutes.
  5. Fill each zucchini half with the savory meat mixture.
  6. Top each filled zucchini with a generous handful of shredded cheese.
  7. Place the zucchini boats on a baking sheet and bake for 20-25 minutes until tender and the cheese is bubbly and golden.

Notes

Leftover zucchini boats can be stored in an airtight container in the fridge for up to 3 days. They also freeze well.
