A moist and flavorful zucchini bread that’s perfect for breakfast or an afternoon snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan, making sure to cover all sides for easy removal later.
  2. Mix the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until everything is well combined.
  3. Whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg.
  4. Combine the dry ingredients into the zucchini mixture until just combined.
  5. Add in the nuts or chocolate chips, if desired.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store leftover zucchini bread wrapped in plastic at room temperature for up to 3 days, or refrigerate for up to a week.
