Delicious and moist zucchini bread muffins that are simple to make and sure to please.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the grated zucchini, vegetable oil, sugar, eggs, and vanilla extract in a large mixing bowl. Mix well until everything is thoroughly combined.
  3. Whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Mix the dry ingredients into the wet ingredients until just combined. Fold in any optional nuts, raisins, or chocolate chips.
  5. Fill the muffin cups about 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra moisture, use freshly grated zucchini without squeezing out the excess liquid. Store muffins in an airtight container for up to 3 days or freeze for up to 2 months.
