  • 1 cup grated carrots
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the grated zucchini, carrots, vegetable oil, eggs, and vanilla extract.
  3. Whisk together the flour, sugar, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared loaf pan, spreading it evenly.
  6. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
