Delight in these crispy zucchini fritters that are perfect for snacking or as a light meal, with a golden exterior and tender inside.

  • 2 medium zucchini, grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (scallions)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Oil for frying

Instructions

  1. Prepare the zucchini by squeezing it in a clean dish towel to remove excess moisture.
  2. Combine the zucchini, flour, eggs, Parmesan, green onions, garlic, salt, pepper, and paprika in a large bowl until well mixed.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil and flatten them slightly.
  5. Fry until golden brown, about 3-4 minutes per side.
  6. Drain on paper towels and serve warm.

Notes

Ensure to squeeze out excess moisture from the zucchini for better texture. These can also be baked instead of frying.
