Crispy, savory zucchini fritters that are easy to make and perfect for any meal.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying

Instructions

  1. Grate and salt the zucchini. Let it sit for 10 minutes.
  2. Squeeze out the moisture using a kitchen towel.
  3. Combine the drained zucchini with flour, Parmesan cheese, egg, black pepper, and garlic powder.
  4. Heat oil in a skillet over medium heat.
  5. Drop heaping spoonfuls of the mixture into the skillet and flatten slightly. Cook until golden brown, about 3-4 minutes on each side.
  6. Drain on paper towels and serve warm.

Notes

Serve with yogurt or sour cream for added flavor.
