Delicious Zucchini Fritters with a crispy exterior and a tender, flavorful interior, perfect as a snack or light meal.

  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a dish. Sprinkle with salt and let sit for 10 minutes.
  2. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  3. Combine the drained zucchini, flour, Parmesan cheese, black pepper, garlic powder, eggs, and chopped parsley in a bowl. Mix until well combined.
  4. Heat oil in a skillet over medium heat, ensuring enough to coat the bottom.
  5. Fry spoonfuls of the zucchini mixture in the skillet, flattening them slightly. Cook until golden brown on both sides.
  6. Drain the fritters on paper towels and serve warm.

Notes

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or skillet for best results.
