Crispy zucchini fritters that bring summer flavors to your table. Perfect as a snack, appetizer, or light meal.

Ingredients

  • 2 medium zucchinis
  • 1/2 cup flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis into a bowl and squeeze out excess moisture.
  2. Combine the grated zucchini, flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Heat about 1/4 inch of oil in a frying pan over medium heat.
  4. Scoop portions of the zucchini mixture into the hot oil and flatten slightly.
  5. Fry each side for 3-4 minutes until golden brown.
  6. Drain on paper towels and serve warm.

Notes

Serve with sour cream or marinara for dipping. Store leftovers in an airtight container for up to 3 days.
