Delicious and crispy Zucchini Fritters filled with fresh garden flavors and spices.

Ingredients

  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1/4 cup flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup finely chopped onion
  • Vegetable oil for frying

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
  2. Press down on the zucchinis to remove excess liquid. The drier they are, the crispier your fritters will be!
  3. Mix together the drained zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion in a bowl. Ensure all ingredients are well incorporated.
  4. Heat a skillet over medium heat and add vegetable oil to a depth of about 1/4 inch.
  5. Drop spoonfuls of the mixture into the hot oil and flatten slightly. Cook for 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and drain on paper towels to keep them crispy.
  7. Serve warm and enjoy the golden-brown perfection!

Notes

These fritters pair wonderfully with a dollop of sour cream or a zesty yogurt dip.
