Zucchini Noodle Carbonara

A light and fresh twist on the classic Italian carbonara, featuring zucchini noodles and crispy bacon.

Ingredients

  • 2 medium zucchinis
  • 4 slices of bacon
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Spiralize the zucchini using a spiralizer and set aside.
  2. Cook the bacon in a skillet until crispy; remove and crumble, reserving the fat in the pan.
  3. Sauté the garlic in the bacon grease until fragrant.
  4. Whisk together the eggs and Parmesan cheese until well combined.
  5. Cook the zucchini noodles in the skillet for 2-3 minutes until tender.
  6. Remove from heat and stir in the egg mixture until creamy.
  7. Add crumbled bacon, season with salt and pepper, and serve immediately.

Notes

Best enjoyed fresh, but leftovers can be stored for up to 2 days in the fridge.
