  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Zest of 1 orange
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the shredded zucchini, flour, sugar, orange juice, vegetable oil, and eggs until well combined.
  3. Whisk together the baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture and stir until just combined; fold in the orange zest.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, mix powdered sugar with orange juice until smooth, then drizzle over the cooled bread.

Notes

For an extra moist loaf, ensure zucchini is well-drained. You can use melted coconut oil instead of vegetable oil for a flavor twist.
