A comforting dish featuring thin zucchini ribbons stuffed with a creamy cheese filling, topped with marinara sauce and mozzarella.

Ingredients

  • 4 medium zucchini
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini into thin slices lengthwise using a mandoline or a sharp knife.
  3. Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out moisture.
  4. Mix together the ricotta cheese, half of the mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Take a slice of zucchini, fill it with the cheese mixture, and roll it up.
  7. Pour the remaining marinara sauce over the top and sprinkle with the leftover mozzarella cheese.
  8. Drizzle with olive oil.
  9. Bake for 25-30 minutes until golden and bubbly.
  10. Let it cool slightly before serving.

Notes

This dish pairs well with a fresh green salad or garlic bread.
