Delicious zucchini boats filled with seasoned ground meat, colorful veggies, and melted cheese, perfect for a satisfying dinner.

  • 2 medium zucchinis
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Lettuce, for serving
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. Brown ground beef or turkey in a skillet over medium heat.
  4. Add the taco seasoning to the meat and follow package instructions.
  5. Stir in the diced tomatoes, corn, and black beans.
  6. Fill each zucchini boat generously with the meat mixture.
  7. Top each filled zucchini with a layer of shredded cheese.
  8. Bake for 20-25 minutes until zucchinis are tender and the cheese is melted.
  9. Serve hot, topped with lettuce, sour cream, and salsa.

Notes
